Most people in Majorca leave small change as a tip in a restaurant. 5% is fine and 10% is generous.

In Majorca VAT is refered to as IVA (Impuesto sobre el Valor Añadido). In restaurants and accommodation IVA is set at 7%, and is usually included on quotes prices (but it is worth checking). On retail good IVA is 16%.
